The internal glaze prevented liquids from seeping through the walls of the vessel. In hot weather, cold water could’ve been applied to the porous exterior of this bowl, to keep the contents cool, as was required in the dairy.

A dairy maid at Markeaton would’ve probably used a pancheon in making milk and cream, which the cook or kitchen maid would likely have used in many of the dishes consumed at the Christmas parties – some of which might have also used ice from the ice house discussed in the Interactive Guide. They might have also used coarse earthenware glazed vessels in preparing or storing other seasonal food and drink.

Some preparations for food and drink consumed at Christmas will have started earlier in the year, for instance, gathering fruits and berries from the estate in autumn for preserving, and in making alcoholic drinks, such as cider, wines and cordials – to be drank alone, and used in spiced seasonal drinks, such as Wassail and Mulled Wine.
